Ingredients:
- 1/2 cup all-purpose flour
- 1/2 cup white sugar
- 1/4 cup cocoa powder
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1/8 tsp coffee (if espresso powder is available will be very good)
- 1/8 cup vegetable oil
- 1/4 tsp vanilla extract
- 1/8 cup boiling water
- 1/4 cup milk
- 1 small egg
Method:
- Take an egg in a medium bowl and beat it well.
- Add sugar, vegetable oil and vanilla extract to it. Again beat it well.
- Sift all dry ingredients together and add them to the mixture. Mix it well.
- Add milk and mix it.
- Add boiling water to this batter at the end.
- Preheat oven to 325 degree F.
- Prepare muffin pan by aligning butter paper to it and spray lightly cooking spray.
- Pour the batter evenly in muffin pan till 3/4 cup is filled. This recipe makes 6 cupcakes.
- Bake the cupcakes for 13-15 minutes or until toothpick inserted at center comes out clean.
- Remove from oven and cool them atleast for 10 minutes before decorating them.
- These cupcakes are so yummy that they don't even need to top with icing.
