Ingredients:
- 3 - 3 1/2 cup buttermilk (Tip 1)
- 1/2 tbsp sugar
- 1/2 tsp coriander powder
- 1/2 tsp cumin powder
- 2 -3 tbsp besan (gram flour) (Tip 2)
- 3-4 green chillies chopped or mashed
- 10-15 curry leaves
- 1/2 tsp mustard seeds
- 1/2 tsp cumin seeds
- pinch of asafoetida
- 1 tbsp oil/ ghee
- 1 tbsp ginger-garlic paste
- salt to taste
Method:
- Pour buttermilk in a vessel. Heat this vessel.
- Add besan, coriander powder, cumin powder, sugar and salt. Mix it and let it boil till besan gets cooked completely.
- Keep on stirring in between so that buttermilk does not come out of vessel.
- Heat oil in pan. Add mustard seeds and wait till they crackle.
- Add cumin seeds and asafoetida.
- Add ginger-garlic paste. Saute it till this paste turns golden (for 30 seconds).
- Add curry leaves and green chilies. Saute them.
- Add prepared buttermilk. Let it boil for a minute and switch off the flame.
- Perfect Kadhi is ready to go with Rice/ Chapati/ Roti.
Tip:
- I generally do not have buttermilk at home. So, I substitute it with Yogurt and water. Here I used 1 cup of Yogurt and remaining water as per desired consistency.
- Besan quantity can be adjusted as per desired consistency. However, adding too much besan will change the taste.
- Plain Pakodas can be added at the end to this Kadhi for Kadhi-Pakoda.
