Ingredients:
- 1 1/2 cup all purpose flour
- 1 cup unsalted butter
- 1/2 cup white sugar
- 2 tsp lemon juice or 1 tsp lemon zest
- a pinch of salt (can be skipped if salted butter is used)
- 1-2 tbsp cold water
Method:
- Mix butter, sugar and lemon zest together till soft creamy mixture. Use butter at room temperature.
- Add other ingredients to this mixture.
- Knead a soft dough. If you have stand mixer with paddle attachment. That will be great. Only make sure to scrape down the bowl and paddle attachment in between.
- Add 1 tbsp of water at a time if needed.
- Roll the dough on butter paper. Set this paper in baking sheet.
- Let this sheet rest in refrigerator for 15 mins.
- After 15 mins, cut the cookies of your desired shapes. Remaining dough can be used afterwards or can be consumed immediately.
- Preheat oven at 350 degree F.
- Bake cookies for around 12-15 mins until they get golden brown.
