Lemon Cookies

Yield: 25-30 Cookies
Preparation Time:

Cooking Time:
15 mins


Ingredients:

  • 1 1/2 cup all purpose flour
  • 1 cup unsalted butter
  • 1/2 cup white sugar
  • 2 tsp lemon juice or 1 tsp lemon zest
  • a pinch of salt (can be skipped if salted butter is used)
  • 1-2 tbsp cold water

Method:

  1. Mix butter, sugar and lemon zest together till soft creamy mixture. Use butter at room temperature.
  2. Add other ingredients to this mixture.
  3. Knead a soft dough. If you have stand mixer with paddle attachment. That will be great. Only make sure to scrape down the bowl and paddle attachment in between.
  4. Add 1 tbsp of water at a time if needed.
  5. Roll the dough on butter paper. Set this paper in baking sheet.
  6. Let this sheet rest in refrigerator for 15 mins.
  7. After 15 mins, cut the cookies of your desired shapes. Remaining dough can be used afterwards or can be consumed immediately.
  8. Preheat oven at 350 degree F.
  9. Bake cookies for around 12-15 mins until they get golden brown.
