Limbache Goad Lonache/ Lemon Pickle (Sweet)

Yield: 2 cups
Preparation Time: 10 mins
Cooking
Time: 20-25 mins

Ingredients:
  • 2 cups lemon quarters (6-7 medium size lemons)
  • 1 cup sugar
  • 2 1/2 tbsp red chili powder
  • 1/2 tsp asafoetida
  • 1 tsp turmeric powder
  • 1 1/2 - 2 tbsp salt

Method:
  1. Wash lemons and wipe them with dry cloth. Make sure that there should not be a single drop of water onto it which will decrease pickle's shelf life.
  2. Remove seeds from all lemon quarters if they are not seedless.
  3. Squeeze out around 1/4 cup juice from lemons.
  4. Add lemon juice and sugar together in a pan. Start heating till syrup gets cooked.
  5. Add lemon quarters and other ingredients. Add squeezed lemons as well.
  6. Let it cook for 10-15 mins.
  7. Cool it and store it in a bottle. Stir once a daily.

Tips:

  1. As days pass, salt in pickle gets absorbed so make sure pickle should little salty when just cooked.
  2. Red chili powder quantity is mentioned considering spicy powder. As I have home made red chili powder it is more spicy. When we brought it from store they are less spicy so you can increase quantity here by 1 tbsp or as per your taste.
