Ingredients:
- 2 cups lemon quarters (6-7 medium size lemons)
- 1 cup sugar
- 2 1/2 tbsp red chili powder
- 1/2 tsp asafoetida
- 1 tsp turmeric powder
- 1 1/2 - 2 tbsp salt
Method:
- Wash lemons and wipe them with dry cloth. Make sure that there should not be a single drop of water onto it which will decrease pickle's shelf life.
- Remove seeds from all lemon quarters if they are not seedless.
- Squeeze out around 1/4 cup juice from lemons.
- Add lemon juice and sugar together in a pan. Start heating till syrup gets cooked.
- Add lemon quarters and other ingredients. Add squeezed lemons as well.
- Let it cook for 10-15 mins.
- Cool it and store it in a bottle. Stir once a daily.
Tips:
- As days pass, salt in pickle gets absorbed so make sure pickle should little salty when just cooked.
- Red chili powder quantity is mentioned considering spicy powder. As I have home made red chili powder it is more spicy. When we brought it from store they are less spicy so you can increase quantity here by 1 tbsp or as per your taste.
