Ingredients for Bhaji:
- 1/2 Kg Potato diced
- 1/4 kg green peas
- 1/4 kg onion finely chopped
- 1/4 kg tomato chopped
- 100 gms cabbage diced
- 100 gms cauliflower diced
- 100 gms capsicum diced
- 1 beet root diced
- 3-4 green chillies chopped
- 1 inch ginger
- 10-12 garlic cloves
- 1 cup coriander leaves finely chopped
- 2-3 tsp red chilli powder
- 2-3 tbsp Pav-Bhaji Masala
- 1/2 cup oil
- 2 tbsp butter
- salt as per taste
Method:
- Cook together all vegetables well - Potatoes, cabbage, cauliflower, capsicum, beet root, green chillies. This can be done in pressure cooker with 3-4 whistles.
- Smash these vegetables once cooked. Strain excess water in separate container. This can be used once bhaji is ready and needs water for desired consistency.
- Heat oil in pan.
- Add ginger-garlic paste. Add chopped onions. Stir it till onion gets translucent.
- Add chopped tomatoes. Stir it till smooth paste.
- Now, add salt, red chilli powder, Pav-Bhaji Masala. Stir it well till oil comes out.
- Add vegetable mixture to this. Mix it well. Cook it for 5 minutes.
- After putting off flame, add butter.
Presentation:
- Shallow fry pav in the pan in butter.
- Serve Bhaji with Pav and Onion, lemon, chopped coriander leaves.
