Potato Kachori

Yield: 10-11 Kachori
Preparation Time: 30 mins
Cooking Time: 15-20 mins


Ingredients:

For Cover:
  • 1 1/4 cup mashed potatoes
  • 1/2 - 3/4 cup corn starch/ sabudana flour can be used if you are on fast
  • salt as per taste

For Stuffing:
  • 1 cup grated coconut
  • 2 tsp sugar
  • 1 tbsp raisins
  • 1-2 tsp lemon juice
  • 2 tsp finely chopped green chillies
  • 1/2 tsp finely chopped ginger
  • 1-2 tbsp finely chopped coriander leaves\ cilantro
  • salt as per taste

Method:

  1. Mix all ingredients for stuffing and keep it aside till we prepare a dough. During this time sugar and lemon juice get well incorporated in stuffing.
  2. Take mashed potatoes and salt in a mixing bowl. Add corn starch little at a time in it because depending on potatoes starch requirement differs. Knead it in order to form nice dough.
  3. Take a small ball from dough. Make a thin circular cover. Put some corn starch on hands while working with dough so that it does not stick to your hand.
  4. Add filling to cover and close it. Form a nice ball.
  5. Deep fry it in oil on medium flame until golden color.
  6. Serve hot.

    Tip:
    Corn starch
    is called as corn flour in India.
