Rasamalai Recipe

Yield: 3-4 Servings
Preparation Time: 20 mins
Standing Time: 8-10 hours

Cooking Time: 1 hour

Ingredients:

For Rasagullas:
  • 4 cups milk
  • 2 tbsp lemon juice
  • 1 cup sugar
  • 4 cups water

For flavored milk:
  • 4 cups milk
  • 4 tbsp sugar
  • 3 tbsp slivered dry fruits (Almonds, cashew nuts, pistachio)
  • 5-8 saffron strands / kesar























Method:

  1. Soak dry fruits in water for 1 hour or so.
  2. Slivered them in order to add to flavored milk.
  3. Heat milk in a pan.
  4. Boil it to 3 cups on simmer.
  5. Add sugar, dry fruits, kesar. Mix everything well.
  6. Heat for 5-10 mins on simmer.
  7. Follow instructions for Rasagulla side by side with two changes.
    -Size of rasagullas should be smaller and shape should be as shown in     image.
    -Instead of putting them in sugar syrup, put them in flavored milk.
  8. Cover rasamalai and let it cool down to room temperature.
  9. Refrigerate Rasamalai for at least 6-7 hours.
  10. Delicious Bengauli Sweet is ready......
