Sevai Kheer

Yield: 4 Servings
Preparation Time: 5 mins
Cooking Time: 15-20 mins


Ingredients:
  • 1 cup sevai
  • 3 cup milk + water (water and milk proportion can be adjusted as per choice)
  • 1/4 cup sugar
  • 1/2 cup assorted dry fruits
  • 1 1/2  tsp cardamom powder
  • 1/2 tsp nutmeg powder
  • pinch of salt
  • 3 tbsp ghee

Method:
  1. Heat ghee in pan. Roast sevai evenly on medium flame till golden brown.
  2. Add milk + water, assorted dry fruits. Let it cook. Time required for cooking and liquid absorption varies depending on sevai. Thin sevai absorbs less liquid and takes less time to cook.
  3. Once sevai are cooked, add sugar. Let it cook again till sugar gets dissolved.
  4. At the end, add cardamom powder, nutmeg powder & salt. Stir it and serve hot.

Tip:
Sometimes
during cooking sevai, kheer starts to get thicken. Add water or milk as per choice at the time of cooking to it so that kheer won't get thicken even after cooling down.
