Ingredients:
- 2 cups heavy cream
- 1 cup milk
- 2/3 cup sugar
- 1 tsp vanilla extract
- 1 tsp gelatin(optional)
Method:
- Add gelatin to 1/4 cup milk and keep it aside to set.
- Take milk and sugar in a pan to boil. Make sure sugar gets dissolved. Keep on simmer stirring occasionally.
- After 5 mins, when gelatin gets set, add it to boiling mixture. Heat till boil.
- Let it cool. Add vanilla essence when cooled.
- Now, pour this mixture in a tin and let it set in freezer. Make sure to cover the tin so that ice-cream won't form ice crystals.
- Beat the cream with hand-mixer till stiff picks are formed.
- Once you see ice-cream started to set (it takes 1/2 hr - 1 hr), cut the ice-cream with knife and beat it adding cream to it.
- Once ice-cream looks soft, keep it in freezer to set again.
- Repeat the process of beating an ice-cream before it gets set for once or twice.
- After that let the ice-cream set 3-4 hours or overnight.
Your homemade soft vanilla ice-cream is ready.....
- Always put ice-cream tin on chilling plate directly.
- Keep freezer cooling setting at maximum.
- If you do not want to use gelatin, skip gelatin related steps. Only thing is that ice-cream will melt soon after taking out of the freezer. However, it will still taste very good.
- You can adjust heavy cream quantity. 1 cup cream can be added while heating milk and 1 cup beaten cream can be added as mentioned above.
