Ingredients:
- 2 cups medium sized sweet potato cubes
- 3/4 cup chopped onion
- 2 tbsp moong dal
- 3-4 vertically chopped green chillies
- 2 tsp mashed garlic and cumin seeds
- 8-9 curry leaves
- 1 tsp red chilli powder
- 1/4 tsp turmeric powder
- 2 tbsp oil
- salt to taste
Method:
- Wash and cut sweet potatoes in medium sized cubes. Take water in a vessel and boil it. Add sweet potatoes in boiling water. Let it cook for 5-7 minutes. Make sure to cover vessel once removed from heat. This will let sweet potato cook more.
- Do not overcook, it will affect the taste and texture. So remove vessel from heat once you observe sweet potatoes start getting cooked.
- Heat oil in pan. Add mustard seeds and wait till it crackles.
- Add chopped onion, salt and green chillies. Sauté onion till translucent.
- Add dal, curry leaves and sauté it for 1-2 minutes.
- Add garlic Sautéand cumin seeds. Stir it for few seconds.
- Add red chili powder and turmeric powder. Mix it well.
- Add sweet potato cubes. Mix very well. Cover the pan for 1-2 minutes. Give a nice stir at last and remove pan from heat.
- Garnish with coriander leaves and serve hot with Chapati/ Roti/ Fulka.
