Ratalyachi Bhaji / Sweet Potato Subzi

Yield: 2 Servings
Preparation Time: 10 mins
Cooking Time: 10 mins

Ingredients:
  • 2 cups medium sized sweet potato cubes
  • 3/4 cup chopped onion
  • 2 tbsp moong dal
  • 3-4 vertically chopped green chillies
  • 2 tsp mashed garlic and cumin seeds
  • 8-9 curry leaves
  • 1 tsp  red chilli powder
  • 1/4 tsp turmeric powder
  • 2 tbsp oil
  • salt to taste

Method:
  1. Wash and cut sweet potatoes in medium sized cubes. Take water in a vessel and boil it. Add sweet potatoes in boiling water. Let it cook for 5-7 minutes. Make sure to cover vessel once removed from heat. This will let sweet potato cook more.
  2. Do not overcook, it will affect the taste and texture. So remove vessel from heat once you observe sweet potatoes start getting cooked.
  3. Heat oil in pan. Add mustard seeds and wait till it crackles.
  4. Add chopped onion, salt and green chillies. Sauté onion till translucent.
  5. Add dal, curry leaves and sauté it for 1-2 minutes.
  6. Add garlic Sautéand cumin seeds. Stir it for few seconds.
  7. Add red chili powder and turmeric powder. Mix it well.
  8. Add sweet potato cubes. Mix very well. Cover the pan for 1-2 minutes. Give a nice stir at last and remove pan from heat.
  9. Garnish with coriander leaves and serve hot with Chapati/ Roti/ Fulka.
