Ingredients:
For Stuffing:
- 1 cup shredded coconut
- 1/2 cup jaggery powder
- 1 tsp cardamom powder
- 1/2 tsp nutmeg powder
- 1 tbsp raisins
- 1 tbsp ghee
For Cover:
- 1 cup rice flour
- 1 tsp ghee
- 1/2 - 1 cup water
- salt to taste
Method:
Stuffing:
- Heat ghee in pan. Sauté coconut and jaggery mixture on medium flame until brown color. Do not overcook otherwise you will loose its softness.
- Add cardamom powder, nutmeg powder, raisins and mix well. Set Aside.
Cover:
- Boil water in a pan.
- Take rice flour, ghee and salt in a mixing bowl. Add boiling water to it. Make sure to stir with spatula or spoon while adding water in order not to form lumps.
- Once you see dough has been started to form, start kneading with your hands. Dough should look smooth and plain.
Modak:
- Take a small ball from dough and form a cover with it. This can be done by rolling small ball in between two plastic papers.
- Put stuffing in it and close it to form Modak. Form all Modak.
- Steam them for 10-15 minutes.
Tips:
- Cover the dough after kneading for sometime if possible. Also, make sure to cover the dough at the time of forming all Modak.
- Idli mold can be used to steam Modak. Another option to steam is put all Modak in sieve and put this in a pot with boiling water. Make sure water does not reach Modak from bottom side.
