Ukadiche Modak\ Steamed Modak

Yield: 15-16 medium Modak
Preparation Time: 45 mins
Cooking Time: 10 mins

Ingredients:

For Stuffing:
  • 1 cup shredded coconut
  • 1/2 cup jaggery powder
  • 1 tsp cardamom powder
  • 1/2 tsp nutmeg powder
  • 1 tbsp raisins
  • 1 tbsp ghee

For Cover:
  • 1 cup rice flour
  • 1 tsp ghee
  • 1/2 - 1 cup water
  • salt to taste

Method:

Stuffing:
  1. Heat ghee in pan. Sauté coconut and jaggery mixture on medium flame until brown color. Do not overcook otherwise you will loose its softness.
  2. Add cardamom powder, nutmeg powder, raisins and mix well. Set Aside.

Cover:

  1. Boil water in a pan.
  2. Take rice flour, ghee and salt in a mixing bowl. Add boiling water to it. Make sure to stir with spatula or spoon while adding water in order not to form lumps.
  3. Once you see dough has been started to form, start kneading with your hands. Dough should look smooth and plain.

Modak:
  1. Take a small ball from dough and form a cover with it. This can be done by rolling small ball in between two plastic papers.
  2. Put stuffing in it and close it to form Modak. Form all Modak.
  3. Steam them for 10-15 minutes.

Tips:
  1. Cover the dough after kneading for sometime if possible. Also, make sure to cover the dough at the time of forming all Modak.
  2. Idli mold can be used to steam Modak. Another option to steam is put all Modak in sieve and put this in a pot with boiling water. Make sure water does not reach Modak from bottom side.
