Batata Vada is very famous Maharashtrian fast food dish. It needs less ingredients as well as it is really easy to make.
Ingredients:
For Stuffing:
- 2- 2 1/2 cup roughly mashed boiled potatoes
- 6-7 green chillies
- 2 tbsp finely chopped coriander leaves
- 1 tbsp ginger-garlic paste
- 1-2 tsp lemon juice
- 1/2 tsp mustard seeds
- 1/2 tsp cumin seeds
- 1/4 tsp turmeric powder
- pinch of asafoetida
- 8-10 curry leaves
- 2 tbsp oil
- oil for frying
- salt to taste
For Cover:
- 1 1/2 cup besan (gram flour)
- 2 tsp red chilli powder
- 1/4 tsp turmeric powder
- 1/8 tsp asafoetida
- salt to taste
- pinch of baking soda (optional)
Method:
- Grind green chillies, ginger, garlic together.
- Heat 2 tbsp oil in pan. Add mustard seeds and wait till they crackle.
- Add cumin seeds and asafoetida.
- Add curry leaves, ginger-garlic-chili paste. Saute it for few seconds.
- Add turmeric powder and salt.
- Add mashed potatoes. Stir everything till tempering gets mixed well.
- At the end, add lemon juice. Again mix well.
- Once removed in bowl, sprinkle coriander leaves. Mix complete subzi with your hands. (mix it like kneading dough so that it will taste evenly)
- Make small even balls and press them in between palms. (Shown in image)
- Take all ingredients for cover in a bowl. Add water and make smooth paste.
- Cover batter should be as much consistent to reside on vada. It should be similar to batter for any pakoda. Add 1 big spoon of hot oil in this mixture. This enhances the taste.
- Dip above bhaji balls in batter and fry it till golden color.
- Super delicious street food is ready at HOME............. No need to worry about its hygiene now.
- Batata Vadas are specially eaten with Ladi Pav. Apply chutney as per your choice - spicy chutney or tamarind chutney and place Vada in between.

Tips:
- While leaving vada into the oil, few drops of batter get dropped off. Let them fry. Take them out in separate plate. Add red chili powder and salt to it. Quick and tasty Chutney for Vada-Pav is ready.
- When no chutney is available at home, I use ketchup to apply on Pav and it tastes really good for me.
