Whole Wheat Ladi Pav Recipe | Whole Wheat Dinner Rolls Recipe

Ingredients:

  • 7 gms dry active yeast
  • 3/4 cup lukewarm water (2 tbsp extra water if needed)
  • 2 tbsp sugar
  • 3/4 tsp salt
  • 2 cups whole wheat flour
  • 1 cup all purpose flour
  • 3/4 cup milk
  • 3 tbsp melted butter or olive oil
  • extra milk for applying
  • extra flour for dusting















Method:
  1. Take a lukewarm water in a bowl. Add sugar to it and mix it. Sprinkle yeast to it. Mix it and keep it aside in a warm place. I generally keep it in a non-heated oven.
  2. Once this mixture is frothy, it is ready to use further.
  3. Take a flour in a mixing bowl. Make in well at center. Add the above mixture, salt, water and milk.
  4. Knead this till a soft dough. You can use spatula or a mixer with paddle attachment/hook or can do it with your hands. Dough at this stage should be little sticky. Keep on kneading it thoroughly with hands and using butter / oil, it will stop sticking. Add extra water if required so that dough should be enough moist.
  5. Dust the plain and clean surface with flour. Take a soft dough on this surface and knead it with your hands. 
  6. Use butter while kneading. Kneading at this stage should be done very well and for at least 10 mins till dough doesn't stick to your hand. Make sure dough should be moist enough. Do not add too much flour. Use flour only for dusting. Do not directly add it to dough.
  7. Put a dough in a greased mixing bowl. Apply some oil on dough as well and cover it with a cling wrap or a damped cloth.
  8. Rest this dough for 45 min to 1 hour till it gets doubled.
  9. Once dough has got doubled, punch the air in it. Knead it only to form a dough.
  10. Make 12 even parts. Keep them in a greased and floured baking tray at small distance from each other.
  11. Cover a tray and rest it for another 30 mins.
  12. After 30 minutes, small balls have risen doubled and have come closer to each other.
  13. Preheat oven at 375 degree F.
  14. Apply Eggwash or only milk on dough with soft brush or a tissue paper. Bake for 30-35 mins. Switch off the oven. Remove tray after 3-4 minutes.
  15. Apply butter on top of each roll which makes them to shine and taste even better.
  16. Your whole wheat Dinner Rolls / Whole Wheat Ladi Pav are ready to eat. Serve hot with Pav-Bhaji, Pakoda\Kanda Bhaji, Misal, Batata Vada. You can even use them for Kachhi Dabeli.

Hi Sucheta,
I just gone through your website. Amazing recipes found on your site especailly bakery items & would like to try also.
But my confusion is abt cup measurements.Will you please tell me 1 cup is of how much in ml i..e. 250 ml, 237ml or 200 ml. Kindly clarify.
